Hello Please
Hello, please bring the umami – with crispy shiitake and tofu agedashi in a black bean consommé, finished with ginger and shallots ($35). They’re also pouring a soy salted caramel old fashioned ($24) – familiar, but with a twist.
La Lune Wine Bar
Over at La Lune, the mushroom and foie gras pithivier wrapped in golden pastry is a must-try, served alongside sautéed Swiss chard ($30). Pair it with a glass of Farr Pinot Noir ($22) – earthy, elegant, and a perfect match.
Lune Croissanterie
Lune Croissanterie is blurring the line between sweet and savoury with a truffle potato pull-apart loaf layered in croissant pastry, cured yolk sauce and parmesan, plus a miso cherry cruffin filled with roasted miso custard, cherry gel and black sesame ganache.
Maeve Wine Bar
At Maeve, the risotto alla parmigiana gets a savoury boost from smoked bacon and miso-roasted mushrooms ($35). Their soy salted caramel old fashioned ($24) is the perfect sweet-and-salty finisher.
Midtown Bar Brisbane
Meet the Martini Umami – a bold blend of Bulldog Gin, fermented pickle brine, and dry vermouth, finished with a porcini mushroom and sea salt rim and garnished with a pickled onion. It’s briny, earthy, and unmistakably umami ($24).
Next Episode
Next Episode goes full flavour with a cocktail of exotic mushroom and butter-washed vodka, miso caramel, lemon, and oolong syrup, garnished with shiitake mushroom and rosemary truffle oil. It’s savoury, buttery, and wildly complex – all yours for $24.
Southside
At Southside, the Cavalier Cobbler brings a punchy mix of Lula white rum, passionfruit, peach, five spice, and amaro ($25). On the food front, dig into wagyu beef gyoza with chilli bean and Sichuan pepper ($26), or go meat-free with the Kung Pao tofu – fiery, flavourful, and loaded with cashew crunch ($34).
